Nasi Tumpang dates back to the 1960s, when local wives would prepare their husbands, who were farmers and fishermen, a simple breakfast of rice, fish, and cucumber before they left in the morning. In the original recipe, a small package consisting of three or four layers is filled with rice, curry, cucumber, and fish salad. There are two methods for eating Nasi Tumpang; either crumble and combine everything into a mound, or use a spoon to go through it layer by layer.

Khao Jam is a well-known Kelantanese Thai dish. the rice is made by using a dozen or more herbs, giving the rice a greenish colour. "Khao" means rice and "jam" means the action of mixing the ingredients together. In Malay, this dish is more commonly known as nasi ulam or "vegetable rice".
