1. Ngiu Chap

Ngiu Chap or Beef Noodle is a recipe from Hong Kong that influenced by Cantonese cuisine. It is almost similar to Bakso from Indonesia.


There are “13 herbs” as master stock sauce. The herbs are fennel, Sichuan peppercorn, star anise, dried citrus peel, cinnamon, sand ginger, and nutmeg. Chef will stew the beef entrails for a couple of hours to make it soft and flavourable. The pancreas, intestine, spleen and tendon are the major characters of the beef entrails. You can eat it with mihun, mee or kway teow (ricecake strip).

2. Kuih Penjaram

Kuih Penjaram is a traditional snacks of Bajau and Bruneian people in Sabah. It's light and not too sweet taste is suitable during tea time. It is also called as UFO cake as it mimics the shape of a UFO. It has crispy and crunchy taste at the end of it and a smooth and moist texture in the middle.


It's ingredients are simple but could lead to failure if mixed in the wrong way. There's also a superstitious where you must be quiet or make less sound during the making of this snack or it will turn out in the wrong way. The ingredients are wheat flour, rice flour, brown sugar, sugar and water. You also might find other recipes for this snack on the internet. Once the batter is mixed it must be left for a few hours before can be fry. The original snack comes in three flavour; original(yellow), pandan(green) and brown sugar(dark brown). But throughout the years, the locals got more creative and come up with new flavours and colors.

3 . Bosou

Bosou is a traditional food for the Kadazan, Dusun, Murut and Rungus (KDMR). It is called a different name in certain district in Sabah. This dish is a preserved food. It could be preserved vegetables, fish and many more. It has a very tasty smell and very unique taste.


The ingredients are the food to be preserved, rice, salt and pangium edule. The pangium edule or the locals call pangi, is the most important ingredient as it acts as preservative. All the ingredients are combined and sealed in a container and marinate it for a few days before it can be cooked and eaten.
